CHICKEN WITH BREAD CRUMBS 
4 chicken cutlets
4 tbsp. mayonnaise
3/4 c. bread crumbs, prefer homemade
1 tbsp. thyme
Pepper and salt (optional)

Season bread crumbs with thyme, pepper and salt. Coat each chicken cutlet with mayonnaise, then bread crumbs. Place on plate crumb-side down and repeat. Bake cutlets on oiled tin foil over broiling rack for 40 minutes at 350 degrees.
