ZUCCHINI LOAF 
3 c. shredded zucchini
1 c. cooked brown rice
1 c. oat bran
1 c. chopped walnuts
2 c. sliced, fresh mushrooms
4 green onions, sliced
1/2 c. apple juice
1 tsp. oregano
4 garlic cloves, minced
1/2 tsp. thyme
1/2 tsp. sage
Pepper

Preheat oven to 375 degrees. Combine all the ingredients in a large bowl. Mix until well blended. Pour into a 9 x 5 inch loaf pan. Sprinkle top with remaining cheese. Bake for 50 minutes or until brown. 6 servings.
