HUSH PUPPIES | |
1 c. white cornmeal 1 tsp. baking powder 1 tsp. salt 1/8 tsp. white pepper 1/2 tsp. sugar 1/4 c. milk 1/4 c. water 1 egg, beaten 2 tbsp. finely cut onion Vegetable oil for frying 1. In a bowl, combine the cornmeal, baking powder, salt, pepper and sugar. Mix together the milk, water and beaten egg. Add to the dry ingredients and blend smooth. Add the onion. 2. Into a deep, heavy skillet, pour vegetable oil to a depth of 1/4". When hot, drop mounds of hush puppy mixture into it by the rounded teaspoonful. Each mound should be about the size of a large walnut. Fry until golden brown on bottom, turn and fry other side. Remove with a slotted spoon and drain on absorbent paper. When all the hush puppies have been fried, serve at once. Hush puppies may be kept warm for a short while in a 200 degree oven. Makes about 18 hush puppies. You will need to make two batches of this recipe to serve the class. |
