ALMOND FRUIT SALAD 
2 c. cooked white or brown rice cooled, room temperature
1 orange, peeled & quartered
1/2 c. seedless red grapes
1 med. kiwi fruit, pared & quartered
1/3 c. slivered almonds, toasted

Toss the above ingredients together and set aside. Make the dressing.

DRESSING:

2 tbsp. orange juice
1 tbsp. soy sauce
2 tsp. vegetable oil
1/4 tsp. fresh minced ginger

Mix the above ingredients together. Pour this mixture over the rice mixture. Toss and serve.
