CUCUMBER-CARROT RELISH | |
4-6 unpeeled cucumbers, coarsely ground (3 1/2 c.) 6 med. carrots, coarsely ground (1 1/2 c.) 2 med. onions, coarsely ground (1 c.) 2 tbsp. salt 2 c. sugar 1 1/2 c. vinegar 1 1/2 tsp. celery seed 1 1/2 tsp. mustard seed Combine cucumbers, carrots, onions, and salt; let stand 3 hours. In 8-10 quart kettle, combine sugar, vinegar, celery seed and mustard seed. Bring to a boil. Add vegetables; again bring to a boil. Reduce heat and simmer 20 minutes. Ladle into clean, hot jars, leaving 1/2 inch headspace. Adjust lids. Process in boiling water bath 15 minutes. Makes 5 half pints. Vegetable ingredients need not be exactly measured. |
