CARROT-CUCUMBER RELISH 
3 1/2 c. coarsely ground, unpeeled cucumbers
1 1/2 c. coarsely ground carrots
1 c. coarsely ground onions
2 tbsp. salt
2 1/2 c. sugar
1 1/2 c. vinegar
1 1/2 tsp. celery seed
1 1/2 tsp. mustard seed

Large cucumbers with seeds removed can be used.

Combine vegetables and salt. Let stand 3 hours. Drain well but do not rinse. Combine sugar, vinegar, celery seed and mustard seed in large pan. Bring to a boil. Add vegetables and simmer, uncovered 20 minutes. Seal in hot sterilized jars. Makes 3 pints.
