CILANTRO SAUCE 
1 bunch fresh cilantro
2 tbsp. olive oil
1 tbsp. distilled white vinegar (or lemon or lime juice)
2 tbsp. water
2 scallions, finely chopped
2 cloves garlic, finely chopped

Remove the cilantro leaves and chop them very finely. Transfer to a bowl and stir in the oil, vinegar, water, scallions and garlic. Cover the bowl tightly and refrigerate before serving.
