MEXICAN BEEF CASSEROLE 
1 1/2 lbs. ground beef
1 med. onion, chopped
Cooking oil
4 oz. can green chilies, chopped
1 can condensed cream of chicken soup
1 can condensed cream of mushroom soup
10 oz. can enchilada sauce
Salt and pepper
12 corn tortillas (or Doritos)
8 oz. cheddar cheese, grated

Brown meat and onion in small amount of hot oil. Add chopped chilies, soups, sauce, salt and pepper. Cook until well mixed. Place a layer of tortillas in a 9 x 13 inch baking dish. Cover with a layer of meat sauce. Alternately tortillas and meat, ending with meat sauce. Cover with grated cheese. Bake at 350 degrees for 20 minutes or until cheese melts. Serves 8.
