CASHEW CHICKEN | |
3 chicken breasts, boned & cut in pieces 1/2 c. green onion, chopped 3 lg. carrots, sliced 2 stalks celery, sliced 1 1/2 c. broccoli, chopped (cauliflower or pea pods could be substituted) 1 sm. can sliced water chestnuts 1 lg. jar mushroom slices 1 sm. pkg. cashews 1 can chicken broth 1/2 c. water 1 1/2 tbsp. cornstarch 1 tbsp. soy sauce Dash salt Put 2 tablespoons oil in electric skillet. Place chicken in oil and saute until nearly done. Remove chicken and reduce heat to simmer. Put broccoli in first then other vegetables and mushrooms. Let simmer for 5 to 10 minutes then add cashews and chestnuts. When vegetables are done, put chicken back into skillet with vegetables. Add broth, water, cornstarch and soy sauce. Simmer for about 5 to 10 minutes minutes. Serve over wild rice with a green salad or slaw and French bread. |
