CHICKEN WITH CASHEWS AND SNOW
PEAS
 
2 chicken breasts, cut up
4 cloves garlic, minced
2 tbsp. soy sauce
2 tbsp. sherry
4 tbsp. cornstarch
2 tbsp. holsin sauce
2 tbsp. peanut oil
40 snow peas
1 can sliced water chestnuts
1 c. chicken stock, hot
1 tsp. salt
1 c. raw, unsalted cashews

Marinate chicken 15 minutes in the next 5 ingredients. Heat oil about 375 degrees and stir fry chicken and marinate about 3 minutes. Add snow peas and water chestnuts and fry 30 seconds. Add stock and salt, stir until thick. Add cashews, mix and serve.
