AUNT FANNY'S BAKED SQUASH 
3 lb. yellow summer squash
1/2 c. chopped onion
1/2 c. cracker meal or bread crumbs
1/2 tsp. black pepper
1 tsp. salt
2 eggs, beaten
1 tbsp. sugar
1 stick butter

Wash and cut up squash. Boil until tender; drain thoroughly, then mash. Add all ingredients to squash except half of the butter. Salt and pepper may be increased to suit taste.

Melt remaining butter. Pour squash in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs. Bake at 375 degrees for about 1 hour or until brown on top. Yield 6-8 servings.
