CARROT PUDDING 
1 c. sugar
1 c. raisins
1 c. grated carrots
1 tsp. salt
1 1/2 c. flour
1 c. currants
1 c. suet or shortening
1 c. grated potato
1 tsp. baking soda

Dissolve soda in a little cold water. Mix all ingredients and steam in a buttered mold for 3 hours. Serve with Lemon Sauce.

LEMON SAUCE:

2 c. water
2-3 tbsp. cornstarch
2/3 c. white sugar

Cook until thickened. Add 2 tbsp. butter and 1 tsp. lemon extract.
