APRICOT - MARSHMALLOW SALAD 
2 pkgs. orange gelatin (reg. size)
2 c. hot water
1/2 c. pineapple juice (keep for dressing)
1/2 c. apricot juice (keep for dressing)
1 lg. can peeled apricots, drained & chopped
1 (#2) can crushed pineapple, drained
2 c. miniature marshmallows

Dissolve gelatin in hot water and juices. Chill until partially congealed. Add fruit and marshmallows. Chill until firm.

DRESSING:

1/2 c. sugar
3 tbsp. flour
1 egg
1 c. combined apricot & pineapple juices
2 tbsp. butter
1 pt. whipping cream or Cool Whip
Grated cheese

Cook all ingredients in double boiler until thickened. Cool. Add Cool Whip and fold into dressing. Sprinkle with grated yellow cheese.
