HUMMINGBIRD CAKE OR DR. BIRD 
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
3 eggs, beaten
1 1/2 c. salad oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple, undrained
2 c. chopped nuts, divided
2 c. chopped bananas

Combine dry ingredients in a large bowl. Add eggs and oil, mixing well. Stir in vanilla, pineapple, 1 cup nuts and bananas.

Spoon into 3 well-greased and floured 9-inch pans. Bake at 350 degrees for 30 minutes. Cool in pans 10 minutes before removing from pans. Cool completely. Spread with cream cheese frosting.

CREAM CHEESE FROSTING:

1 (8 oz.) pkg. cream cheese
1/2 c. butter
1 (16 oz.) pkg. powdered sugar
1 tsp. vanilla

Combine softened cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until light and fluffy. Spread over layers, side and top of cake. Sprinkle 1 cup chopped nuts on top of the cake.
