3 c. flour
1 tsp. cinnamon
1 tsp. salt
1 (8 oz.) can crushed pineapple
3 eggs
1/2 c. coconut
1 tsp. baking soda
2 c. sugar
1 1/2 c. oil
1 1/2 tsp. vanilla
2 c. diced bananas

Preheat oven to 350 degrees. Grease and flour tube or bundt pan. Sift dry ingredients. Add other ingredients. Mix until blended. Pour into pan and bake 1 hour and 20 minutes. Cool on rack.

TOPPING:

1 (8 oz.) cream cheese, softened
1 stick butter, softened
1 pkg. confectioners' sugar
1 tsp. vanilla

Mix all together. Top with nuts (optional).
