SKILLET MEAT LOAF 
2 tsp. instant beef bouillon (2 cubes)
3/4 c. boiling water
1 lb. lean ground beef
3/4 c. Bisquick
1/2 c. crushed crackers
1/2 c. chopped onion
1/2 c. chopped green pepper
2 tbsp. catsup
1/8 tsp. pepper
2-3 med. potatoes, cut into wedges
4 slices American cheese, cut in half
1 (4 oz.) can mushrooms

Dissolve bouillon. Mix 1/4 of bouillon with ground beef, Bisquick, crackers, onion, green pepper, catsup and pepper; mix well. Pat into a 12" skillet. Leave 1" around the edge of loaf. Pour remaining bouillon over loaf. Place potato wedges spoke fashion on top of the loaf. Cover and cook over low heat 30 to 40 minutes until potatoes are done. Place cheese slices on top of potatoes and sprinkle mushrooms over everything. Cover and cook 3 minutes longer until cheese melts. Makes 4 to 6 servings.
