DOUBLE - OAT DROP COOKIES | |
1 c. butter 1 1/4 c. packed brown sugar 2 eggs or equivalent amount of Egg Beaters 1/2 tsp. vanilla 1 1/4 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt (optional) 1/2 tsp. cinnamon 1 c. quick or old-fashioned rolled oats 3/4 c. oat bran 1 c. raisins or 1/2 c. chopped dried apricots or dates Heat oven to 350 degrees. Grease 2 baking sheets. Mix thoroughly butter, sugar, eggs, and vanilla. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls 2 inches apart on prepared baking sheet. Bake 10 to 12 minutes or until light golden brown. Makes about 5 dozen cookies. Cookies freeze well. |
