BEEF STROGANOFF 
3 tbsp. butter
1/2 lbs. mushrooms
1 lg. onion, cut into 1/2 inch slices
1 1/2-2 lbs. flank or round steak
1 tbsp. horseradish
1/2 c. water
1 1/4 tsp. salt
1/2 tsp. pepper
1 c. sour cream

Melt butter in fry pan. Saute mushrooms, onion slices for 5 minutes; remove from fat. Trim steak and slice across grain into 1-inch strips. Roll in flour and brown in butter.

Place onion mixture on top of meat; add horseradish, water, salt and pepper. Cover and cook over low heat 2 hours or until meat is tender. Just before serving, add sour cream. Serve over rice.
