ROSALYN'S FAVORITE POUND CAKE | |
2 c. sugar 2 1/2 sticks butter 6 eggs 1 tsp. vanilla 1/2 c. peanut butter, smooth or chunky 2 c. flour 1 tsp. baking powder 1/4 tsp. salt Cream butter and sugar until light yellow. Beat in eggs, one at a time until thoroughly blended. Add vanilla and slowly beat in peanut butter. Sift flour with baking powder and salt. Add flour mixture a little at a time, until well blended. Line a tube pan (9 or 10 inch) on the bottom with wax paper. Spoon in batter. Bake at 350 degrees for 45 minutes. Reduce heat to 325 degrees for 15-20 minutes or until tests done. Cool on wire rack for 10 minutes. Note: Toward the end of baking, sprinkle top with 1/3 cup chopped peanuts. |
