RUM CAKE 
1 c. butter
2 c. sugar
4 eggs, separated
3 c. flour
3 tsp. baking powder
1 c. raisins (opt.)
3/4 c. milk & fill to 1 c. with brandy
Rind of 1 lemon
1 tsp. vanilla
2 shot glasses rum

Cream butter and sugar. Add egg yolks. In separate bowl mix flour, baking powder and raisins. Then add milk and flour, mix alternately to butter, sugar and egg yolk mix. Then add lemon rind, vanilla and rum. Beat egg whites with salt until stiff. Fold this into batter. Spray baking pans with Pam before filling. Bake at 350 degrees. Makes 3 (1 lb.) loaves. Use pans 8"x4"x3" deep. Bake 1 hour or until toothpick inserted in center comes out clean. Can use small baking loaf pans and bake those 45 minutes or until toothpick comes out clean.
