WHITE FRUIT CAKE 
1 c. butter
2 c. sugar
4 c. sifted flour
2/3 tsp. salt
4 tsp. baking powder
Grated rind of orange
2/3 c. orange juice
1 c. raisins
1/2 c. mixed candied peel
1/2 c. candied cherries, halved
1/2 c. candied pineapple
2/3 c. pecans or walnuts
6 eggs
2 tbsp. rum flavoring or to taste

Cream butter and sugar until very light. Add egg yolks and rum. Mix in sifted dry ingredients alternately with grated orange rind and juice. Add fruits and nuts; mix thoroughly. Fold in stiffly beaten egg whites. Turn into Bundt pan. Bake at 350 degrees for about 1 1/2 hours. See Miscellaneous for Orange Glaze.
