WHITE FRUIT CAKE | |
1 c. sugar 1 c. butter 3 eggs 1/2 c. canned peach juice 2 c. flour 1 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 1 tsp. lemon flavoring 1 c. coconut 1 c. candied cherries 1 c. candied pineapple 1 c. chopped raisins 2 c. chopped dates 2 c. chopped nuts Cream together sugar and butter then add eggs and peach juice. Sift together and add flour, soda, baking powder, salt and add lemon flavoring and coconut. Take 1 cup flour and dredge the rest of the ingredients (fruits, nuts, etc.) fold in. Bake at 325 degrees in large angel tin (1 1/2 to 2 hours) or 2 or 3 bread pans, well greased. Citron can be substituted for dates and 1 cup mixed candied fruit for raisins. Best if all ingredients are at room temperature. This recipe has been in the family for many years and has been baked for Joe C. Sawyer for the last 43 years for his birthday 12/25. |
