APPLE CAKE 
4 c. chopped apples, cut into half-inch chunks
2 eggs, beaten
2 c. white sugar
1/2 c. cooking oil
1/2 c. raisins
1/2 c. chopped nut meats

Pour beaten eggs over apples and stir to coat. Add sugar and oil; add raisins and nut meats.

Sift and measure: 2 tsp. cinnamon 2 tsp. baking soda 1 tsp. vanilla 1/2 tsp. salt

Add dry ingredients to apple mixture and pour into well-greased and floured 9 x 12 baking pan. Bake for 1 hour in 325 degree oven. Test cake with tester; when done it should shrink from sides of pan.

SAUCE (optional) :
3/4 c. brown sugar
1/3 c. cornstarch
3 c. boiling water
1 stick butter
Vanilla, rum, or brandy flavoring to taste

Blend brown sugar and cornstarch well. Slowly add boiling water and cook until clear. Keep an eye on sauce or it will scorch. Add butter, then flavoring to taste.

This sauce is great served over steamed Christmas puddings such as plum, cranberry, date, etc. (This is a variation of Vanilla sauce.)
