MOIST APPLE CAKE | |
1 c. salad oil 2 eggs 2 c. sugar 2 1/2 c. flour 1 tsp. cinnamon 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 tsp. maple flavoring 3 c. sliced tart apples, peeled 1 c. chopped nuts, pecans are very good Beat salad oil, eggs and sugar until light. Sift all the dry ingredients together and add to the first mixture. Stir in the flavoring (can use vanilla instead of maple). Then add the apples and nuts. At this point use a wooden spoon to mix instead of your mixer. Spoon into a 9 x 13 inch greased pan and bake at 350 degrees for 55 minutes. Do not underbake. This cake is very nice baked in a Bundt pan also. Do not store in a tightly covered container as it will tend to get soggy. Nice to serve with topping or ice cream. |
