APPLE CAKE 
2 c. granulated sugar
3 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 1/2 c. Wesson oil
3 eggs
1 c. chopped dates (roll in flour)
2 c. coconut, frozen or canned
2 c. chopped pecans
3 c. raw apples, peeled & grated
2 tsp. vanilla

Cream sugar, eggs and Wesson oil. Then add dry ingredients. Sift flour and other dry ingredients together before adding. Add coconut, dates, pecans and apples to batter; mix well. Batter will be very thick. Bake in tube pan for 1 1/2 hours at 300 degrees for loaves bake in two loaf pans in 9x5x3 inch for 1 1/4 hours at 300 degrees.

TOPPING (BROWN SUGAR GLAZE) :

1 stick butter, softened
1 c. light brown sugar
1/4 c. sweet milk

Bring to boil and boil until it bubbles for 3-4 minutes on low heat. Pour over hot cake. Stick holes in cake so icing will soak in.
