LEBKUCHEN 
1 1/2 c. honey, warmed
1 c. flour, stirred into honey
6 eggs beaten and stirred into honey mix
1 lb. powdered sugar
1/2 tsp. baking soda
1 tsp. cloves
1 tsp. mace
Grated rind of 2 lemons
1 lb. candied citron and mixed fruit
4 c. flour (total of 5 c.)
1/2 tsp. salt
2 tsp. cinnamon
1 lb. chopped almonds

Combine remainder of ingredients with honey, egg and flour mixture. Refrigerate overnight. Roll out on well floured board to about 1/2-inch thickness, using small amounts of dough at a time. Keep remainder of dough refrigerated until ready to use.

Cut in shapes with floured cookie cutters. Bake on well-greased cookie sheets in 400 degree oven for about 10 minutes. Remove from pan immediately or they will stick. While cookies are still warm, brush with a glaze of powdered sugar combined with lemon juice. Store in tightly closed tin.
