OVEN BAKED WESTERN OMELET 
3 green onions
1 med. sized red pepper
Salad oil
6 lg. eggs
1 c. shredded Swiss cheese
1/4 tsp. salt
1 (6 oz.) pkg. Canadian style bacon or sliced ham
Parsley sprigs for garnish

1. Preheat oven to 375 degrees. Slice green onions and red pepper into 1/4" thick slices. In 10" skillet with oven safe handle, over medium high heat, in 2 tablespoons hot salad oil, cook onions and pepper 5 minutes.

2. In bowl, mix well eggs, cheese, salt and 1/3 cup water. Pour the egg mixture over onions and pepper in skillet. Bake 15 to 20 minutes until set.

3. Meanwhile, in another skillet over medium high heat, in 1 tablespoon hot salad oil, cook Canadian style bacon until lightly browned.

4. Top omelet with Canadian bacon. Garnish with parsley sprigs. Makes 6 servings.

Each serving: About 255 calories, 18 g fat, 245 mg cholesterol, 635 mg sodium.
