BAKED OMELET 
1/2 c. all-purpose flour
1 c. milk
2 tbsp. butter
1/2 tsp. salt
4 eggs
1 c. fully cooked ham chunks
1 sm. onion, chopped
1 1/2 c. shredded Cheddar or Swiss cheese

Preheat oven to 350 degrees. Line 15 1/2 x 10 1/2 x 1 inch jelly roll pan with foil and grease generously. Beat flour, milk, butter, salt and eggs until well blended and pour into pan. Sprinkle with ham and onion. Bake 15-18 minutes at 350 degrees until eggs are set.

Immediately sprinkle with cheese. Roll up beginning at narrow end of pan, using foil to lift and roll. Cut omelet into 1 1/2 inch slices. 6 servings
