APPLE MUFFINS 
Streusel Topping (recipe follows)
1 1/2 c. flour
1 c. sugar
2 tsp. baking powder
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. cloves
1 c. chopped apple
1/2 c. chopped walnuts
2 eggs
1/2 c. buttermilk
1/2 c. butter, melted

Prepare streusel topping, set aside. In a large bowl, combine flour, sugar, powder, cinnamon, soda and cloves. Add apple and walnuts, toss to coat.

In a small bowl, beat eggs, add buttermilk and butter. Add to flour mixture, stir just until blended.

Fill muffin cups 2/3 full. Sprinkle streusel topping on top. Bake in a 400 degree oven 15-25 minutes or until toothpick inserted in center comes out clean.

STREUSEL TOPPING:

1/2 c. flour
1/3 c. packed brown sugar
1 tsp. cinnamon
1/4 c. melted butter

Mix until crumbly.
