POTATO BUNS 
2 pkg. yeast
1/2 c. warm water
3 eggs
1/2 c. sugar
1/2 c. mashed potatoes
1/2 c. butter
3/4 c. warm water
1 tsp. salt
6 c. flour

Dissolve yeast in 1/2 cup warm water. Measure flour into large bowl. Mix all other ingredients; add yeast mixture and pour over flour. Mix good and knead. Let rise. Punch down in bowl, take approximately 1/4 cup portions rolling in your hands to form a ball and place on cookie sheet.

Bake on middle shelf at 350°F for 10 minutes or until nicely browned.

Yields approximately 2 dozen.
