PINEAPPLE LIME VELVET 
1 (3 oz.) pkg. lime gelatin
1 c. boiling water
3 oz. pkg. cream cheese
2/3 c. crushed pineapple with juice
1/2 c. finely cut celery
1/2 c. Cool Whip

Add gelatin to water and stir until dissolved. Add cheese, beat with a beater until cheese is well blended. Chill until slightly congealed then add pineapple and celery. Fold in whipped cream lightly but thoroughly. Turn into 3 to 4 cup mold or dish. Chill until firm. Serves 6 to 8. Can be doubled easily.
