CHINESE-STYLE FRIED RICE 
1 1/2 c. water, divided
1 1/2 c. Minute Rice
2 eggs, slightly beaten
3 tbsp. butter
1/3 c. chopped onion or green onion
2 to 3 tbsp. soy sauce

Bring 1 1/4 cups water to boiling. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Meanwhile, cook eggs in butter in a 10 inch skillet until set. Add onion and cooked rice. Cook and stir over medium heat until rice and onion are lightly browned, about 5 minutes. Mix remaining 1/4 cup water with soy sauce. Stir into rice mixture.

Makes 4 servings.
