CHINESE FRIED RICE 
2 c. cooked rice
2 eggs
4 scallions
1/2 c. parsley leaves
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. sliced pork
1 tbsp. soy sauce

Dice pork, chop scallions, beat eggs. Heat a small amount of oil in frying pan. Toss in rice. Fry until hot, stir and gently press out lumps. Add scallions, salt, pepper and pork. When mixed, make a hollow center in the rice. Break in 2 eggs, scramble. When semi-cooked, stir into rice until blended. Stir in parsley. Sprinkle with soy sauce. Serve.
