CHINESE STYLE FRIED RICE 
1 1/2 c. water
1 1/3 c. minute rice
3 tbsp. butter
1 egg, beaten
1/2 c. chopped onion
2 to 3 tsp. soy sauce

Bring 1 cup of water to a boil in a saucepan. Stir in rice. Remove from heat, cover and let stand 5 minutes. Meanwhile cook egg in butter in 10 inch skillet until set. Add onion and rice, cook and stir over medium heat, until rice and onion are slightly browned about 5 minutes. Combine remaining water and soy sauce, stir into rice. Makes about 3 to 4 cups.
