CHINESE STYLE FRIED RICE | |
1 1/2 c. water 1 1/2 c. minute rice 1 egg, beaten 3 tbsp. butter 1/3 c. chopped onion 2 tsp. & 3 tbsp. soy sauce Bring 1 cup of the water to a boil in a saucepan. Stir in rice. Remove from heat. Cover and let stand 5 minutes. Meanwhile, cook egg in butter in 10 inch skillet until set. Add onion and the rice and cook and stir over medium heat until rice and onion are lightly browned, about 5 minutes. Combine remaining water and the soy sauce. Stir into rice. Makes about 3 cups or 4 servings. Why can't all the problems of life hit us when we're 17 and KNOW everything? CREAMY DILLED PEAS 2 c. sour cream 1/2 c. mayonnaise 1/2 c. chopped scallions 1 tbsp. dill weed 6 c. cooked peas Salt & pepper to taste In a large saucepan, combine all ingredients. Cook over low heat, stirring frequently, until heated through. Do not boil. Serve immediately. Serves 12. |
