PINEAPPLE DELIGHT | |
1 (8 oz.) can crushed pineapple 1 (8 oz.) can evaporated milk 1 c. sugar 3 eggs, beaten well 1 tsp. vanilla essence 1 drop green food color 1 env. Knox gelatin (unflavored) Bring the milk to the boil and add sugar. Once sugar is dissolved add the essence, food color and the beaten eggs. Stir constantly until the mixture thickens to a custard consistency. Remove mixture from fire. Dissolve gelatin in 1 tablespoon boiling water and add to the mixture. Beat mixture in a blender for 30 seconds and set aside. Drain syrup from pineapple well and put it in a large bowl and pour the custard over. Mix and refrigerate to set. Serves 4-5 people. |
