1 can (8 oz.) Dole pineapple chunks in juice
1 pkg. (4 serving size) Jello brand strawberry flavor sugar free gelatin
3/4 c. boiling water
Ice cubes
1/2 c. thawed Cool Whip

Drain pineapple, reserving juice. Completely dissolve gelatin in boiling water. Add ice to reserved juice to make 1 1/4 cups. Add to gelatin; stir until thickened. Remove any unmelted ice.

Mix 1/2 cup of the thickened gelatin with the whipped topping. Add pineapple to remaining gelatin and pour into dessert glasses. Top with whipped topping mixture. Chill about 1 hour or until set. Garnish with additional pineapple, if desired. Makes 4 servings.
