BEST RHUBARB SHORTCAKE | |
4 c. rhubarb 3/4 c. sugar 3 tbsp. butter 1 c. flour 1 tsp. baking powder 1/4 tsp. salt 1/2 c. milk 1 tbsp. cornstarch 1 tbsp. sugar 1/4 tsp. salt 1 c. boiling water with a few drops of red coloring Place rhubarb in 8x8 inch pan. Cream sugar and butter. Mix flour, baking powder and salt. Add milk and flour mix to creamed mixture. Spread over rhubarb. Combine sugar, 1 tablespoon cornstarch and 1/4 teaspoon salt. Sprinkle over top. Pour boiling water over top. Bake at 350 degree oven for 1 hour. Serves 6 to 8 with ice cream or Cool Whip. |
