BEST RHUBARB SHORTCAKE 
4 c. rhubarb
3/4 c. sugar
3 tbsp. butter
1 c. flour
1 tsp. baking powder
1/4 tsp. salt
1/2 c. milk
1 c. sugar
1 tbsp. cornstarch
1/4 tsp. salt
1 c. boiling water with few drops red food coloring

Place cubed or crushed rhubarb in 8x8 inch pan. Cream sugar and butter. Mix flour, baking powder and salt. Add milk and flour mixture to creamed mixture. Spread over rhubarb.

Combine 1 cup sugar, 1 tablespoon cornstarch and 1/4 teaspoon salt. Sprinkle over top. Pour 1 cup boiling water over it. Bake in 350 degree oven for 1 hour. Serves 6 to 8.
