MARTHA'S OLD TIMEY COCONUT CREAM
PIE
 
1 c. sugar
3 egg yolks
3 tbsp. flour
Pinch salt
1 1/2 tsp. vanilla
1 c. flaked coconut
2 c. milk
9 inch baked pie crust

Mix sugar, flour and salt. Add egg yolks and milk, mix well. Cook (on stove or microwave) until thickened. Add butter, coconut and vanilla. Pour into baked pie crust. Add meringue to top of pie and brown at 350 degrees.

MERINGUE:

3 egg whites
3 tbsp. sugar
Pinch salt
1 tsp. vanilla

Beat egg whites and salt until stiff, adding sugar and vanilla last. Top pie and brown.

Since microwave ovens vary in power, you may need to adjust your cooking time.
