COCONUT CREAM PIE 
1 c. sugar
2 tbsp. flour
3 egg yolks
2 1/2 c. milk
1 c. coconut
3 tbsp. cornstarch
1/2 tsp. salt

MERINGUE TOP INGREDIENTS:

2 egg whites
1/4 tsp. cream of tartar
1/4 c. sugar
1/4 tsp. sugar

Mix all ingredients for pie in a large microwave bowl. Put in microwave for 8 to 10 minutes on high, stir occasionally until desired thickness. Pour into prepared single pie crust.

Mix all ingredients for meringue on high speed. Put meringue on top of pie mixture. Sprinkle with coconut. Brown in oven at 425 degrees. Cool on rack. Refrigerate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
