LEMONY CHICKEN WITH MUSHROOMS 
2 lbs. breaded, fried thin cutlets
3 cloves minced garlic
1 tbsp. chopped parsley
1/2 tsp. oregano
1 lb. sliced mushrooms
2 sticks butter
Lemon juice to taste

Melt butter. Add spices and mushrooms. Simmer five to eight minutes, until mushrooms are tender. Add lemon juice (at least 1/2 cup). Pour over chicken. Bake approximately 1/2 hour, covered, at 350 degrees.
