CHICKEN BROCCOLI "STIR FRY" 
1 pkg. chicken cutlets
Fresh head broccoli
1/2 c. olive oil
1 clove garlic
1 c. chicken broth
About 1 tbsp. grated cheese
1 tsp. pepper
1 tsp. salt (optional)

Heat oil in large skillet or Dutch oven. Slice cutlets into strips and add to oil with garlic and pepper. Stir until chicken is coated and browning. Add chicken broth (canned or from fresh made soup) and crisp, fresh broccoli. If needed you can add a little more broth or water. Simmer 25 minutes. Chicken will be tender, broccoli still somewhat crisp. Serve over rice or pasta. Sprinkle with Parmesan cheese.
