BANANA BREAD 
1 stick softened butter
1 c. sugar
2 eggs, beaten
3 lg. bananas, mashed (over ripe best)
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. vanilla extract
Pinch of salt
1 c. broken pecans

Cream butter and sugar. Add eggs and bananas, mixing well. Mix flour and baking soda together and sift into batter, blending thoroughly. Stir in remaining ingredients. Pour into greased and floured loaf pan. Bake for 50 minutes at 350 degrees. Instead of greasing and flouring pan, I use butter and sugar.
