OATMEAL SCOTCHIES 
1 c. brown sugar
1 c. white sugar
1 c. shortening
2 c. quick oats
2 eggs, beaten
1 tsp. vanilla
1/2 tsp. lemon extract
1/2 tsp. baking powder
1 tsp. baking soda
2 c. flour
1/2 tsp. salt
1 (6 oz.) butterscotch chips

Cream sugar and shortening. Add other ingredients. Mix well. Bake at 350 degrees for 15 minutes. Roll into balls - or drop from spoon onto cookie sheet.
