ZUCCHINI BREAD | |
1 c. chopped nuts (any kind) 2 c. grated zucchini squash 2 c. sugar 3 1/2 c. flour 1 1/2 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3/4 tsp. baking powder 1 tsp. vanilla 1 c. vegetable oil 4 eggs 1 c. raisins Mix all ingredients together. Do not over mix. Pour into 3 medium size loaf pans. Bake at 350 degrees about 55 minutes. Allow to cool 5 minutes. Turn onto rack to finish cooling. Serve with coffee or light meal. |
