MINCEMEAT BARS | |
1 pkg. dry mincemeat 1 c. boiling water 1/4 c. sugar 3/4 c. shortening (solid Crisco) 3/4 c. sugar 1/3 c. molasses 1 1/2 c. flour, sifted with 1 tsp. salt 2 c. dry oatmeal Cook together mincemeat, water and 1/4 cup sugar, until smooth and then cool. Cream Crisco and 3/4 cup sugar; add molasses. Add flour and salt. Add oatmeal. This mixture when worked together is quite crumbly. Gently press half in an 8 x 8 x 2 inch pan. Spread mincemeat mixture over this. Put rest of oatmeal mixture over mincemeat and press into place gently. Bake at 325 degrees for 45 minutes to 1 hour until lightly browned. |
