MINI CHEESECAKES 
Vanilla wafers
Pie filling: cherry, blueberry, etc.

CREAM CHEESE MIXTURE:

8 oz. cream cheese, softened
1/3 c. sugar
1 egg
1 tsp. lemon juice
1/2 tsp. vanilla

Beat cream cheese mixture ingredients together until smooth and creamy. Using paper cupcake holders, place a wafer in each into a muffin tin. Fill each cup 2/3 full with cream cheese mixture. Bake 15 to 20 minutes at 350 degrees. Let cool. Top with pie filling. (Can be frozen without topping on them.)
