ZUCCHINI AND TOMATOES 
4 c. zucchini
1 med. onion, diced
1 lg. tomato, diced
1 tsp. salt
1/2 tsp. pepper
1 c. Bisquick
1/2 tsp. oregano
1/2 c. Cheddar cheese, grated
3 eggs, well beaten
1 c. salad oil

Mix all ingredients except oil and eggs; pour into greased casserole. Combine eggs slowly with oil. Pour over casserole. Bake at 350 degrees for 40 minutes. Sprinkle some more grated cheese on top during last 10 minutes of baking. Makes 6-8 servings.
