IMPOSSIBLE ZUCCHINI QUICHE 
2 c. cubed, raw zucchini
1/2 c. onions, diced
1 c. tomatoes, diced
1/3 c. Parmesan cheese
3/4 c. Bisquick mix
1 1/2 c. milk
3 eggs
1/2 tsp. salt
1/4 tsp. pepper

(Or 3/4 cup flour, 1 teaspoon baking soda, 2 tablespoons shortening).

Spread zucchini, tomatoes, onions, and cheese into 10 inch pie pan. Mix remaining ingredients with mixer at medium speed. Bake at 375 degrees for 40 minutes, until knife comes out clean. Let it set for 5 minutes to firm up before serving.
